A head rush like never before

In late November, last year, we installed two foeders. Now you may be thinking, “What is a food-er? It just looks like a giant barrel!” well, a foeder is just a giant barrel. Ours is nearly nine times bigger than your average barrel to be exact. Barrel aging is a talent of ours, and our foeder allows us to explore different brewing methods.

Our first foeder release may sound familiar. Head Rush Brett IPA isn’t a totally new beer for us. We’ve even doubled down on the tropical flavor and added pineapple to it in the past. What’s different this time is we’ve allowed the Brett (Brettanomyces - a unique strain of yeast) to do a full fermentation in our foeder for the past six months. Previously, Head Rush developed in single barrels that might take on their own characteristics before being blended together.

Before we get ahead of ourselves, let’s back up and explain what even is a Brett IPA? A typical beer is made from water, malt, yeast, and hops. (Plus a few other ingredients sometimes if you don’t just listen to what the German’s have to say.) So what’s so special about the Brett IPA? It’s the yeast. Brettanomyces yeast is known for its tropical vibes - think pineapple, stone fruit, with a touch of barnyard. Don’t be afraid of the barnyard funk, though, Brett IPAs are still a typical, delicious IPA. Brettanomyces yeast is more about a process change than a total style change from an American IPA.

This Head Rush Brett IPA is all Triple C. Our wort, our love, and the wood of the foeder will give it unique characteristics that will continue to live on in the foeder’s wood. The Solera method, a traditional winemaking method, allows us to pull out about half (7 barrels) for packaging, the remaining beer in the foeder will help develop the new brew that is added. This gives our brewers more control over the aging process and overall final product.

Last year, Paste Magazine, ranked Head Rush in the top 25% of the 324 IPAs they tried. The Head Rush Brett IPA releases in our taproom this Saturday.
